Pineapple Strawberry Smoothie
Blend together:
1 can crushed pineapple (with the juice)
1/3 cup applesauce
1 bag (16 oz) frozen strawberries
 
Dreamcicle Smoothie
Blend together:
1 cup vanilla yogurt ice cream
2/3 C milk
1/4 C thawed orange juice concentrate
1/2 tsp. vanilla flavoring
 
Strawberry Banana Smoothie
Blend together:
1 bag (16 oz) frozen strawberries
1 fzn. banana
1 1/2 C orange juice
1 1/2 C milk
Summer Salad
1 pint strawberries, sliced
1 avacado, cubed
1 medium red onion, diced
1 head romaine
 
Dressing:
Blend together -
1/4 C water
1/2 tsp. salt
1 small onion
1/4 C balsamic vinegar
1/2 C sugar
1 clove garlic
3/4 C oil
 
 
Creamy Mustard Dressing:
 
1/2 c brown sugar
1/2 c mayonnaise
1/2 c vinegar
1 c oil
2 tsp mustard
1 tsp salt
1 tsp black pepper
 
Blend ingredients well in blender, pour over salad of your choice
 
Raspberry Vineigrette
 
10 oz Raspberry jam
1/4 c oil
1 c apple cider
 
Blend in blender, pour over salad of your choice
 
Ceasar Dressing
 
1/2 c mayonnaise
2 T vinegar
2 T sugar
4 t oregano
4 T water
 
Classic Dressing
 
1/3 c oil
1/4 c vinegar
1/4 c sugar
1/4 tsp dry mustard
1 clove crushed garlic
1/2 t salt
 
Spinach Lentil Soup
 
3 T olive oil
1 diced onion
2 cloves fresh garlic coarsely chopped
2 diced carrots
2 diced stalks celery
1 t dried oregano
1 t dried basil
1 t dried thyme
1 28 oz can diced tomatoes
1 10 oz box frozen chopped spinach
1/2 c dried red lentils
1/2 c dried green lentils
1/4 c dried pearl barley
8 c chicken or vegetable stock
fine sea salt
freshly ground black pepper
 
Brown onion adn garlic, add carrots, celery and spices.  Stir  and cook for 3 minutes
Add the tomatoes and spinach, stir, then add red lentils, green lentils and barley. Add stock.
Cover and simmer for 45 min on low heat.
 
Cream of Butternut Squash Soup
 
1 butternut squach
2 carrot
2 med sweet potato
1 onion
salt to taste
 
Sautee onion, add vegetables and cover with water.  Add salt and cook until softened.  Blend with hand blender.
